Only three months old, this young cheese is a P. D. O. sheep from La Mancha in central Spain. The rind bears the traditional herringbone imprints that recall the days when the curds were pressed with a straw cheese "belt" of esparto. Manchego is a name protected cheese which may only be made in Spains central La Mancha regionand only from the milk of Manchega
